One Pot Fettucine Alfredo

In my opinion this is way better than the canned Alfredo sauce and easy to make.
-cook your noodles like you normally would
-if you like broccoli in your Alfredo then add some broccoli flowerets in with your boiling noodles just two minutes before you are going to take the noodles out.
-put noodles/broccoli in a strainer and leave it there for a minute.
-in the same pot add one pint of whipping cream, let it heat up a bit. (careful! it only takes a minute to warm up and you don't want it to overflow on you)
-when it's nice and warm add 1 bag of grated Parmesan cheese, whisk until smooth
-put your noodles and broccoli back in the pot and toss together with the sauce.
notes:
a) Some people put butter in their sauce but I found that you really don't need it, plus it cuts down on the calories a bit.
b) To make your fettucine stretch more and be more colorful and tasty try adding mushrooms, sundried tomatoes, and/or chicken.
c) Try different pasta with the sauce for something different like bowtie, wheat, orzo or angelhair.

Taco Salad

My husband absolutely loves when I make this. Whenever we have game night or fight night, he wants me to make it. This is fine by me because it's easy and can feed lots of people for cheap!
All I do is...

-cook some ground beef
-warm up some canned beans
-prep the toppings (lettuce, cheese, tomato, guacamole, sour cream, hot sauce)
-Layer it over some spicy nacho Doritos and munch!
It's kinda fun for the guests too because they get to make it how they like it.

Quick Tip: Put the sour cream in a sandwich bag and snip a tiny hole in one of the corners. People have fun making little swirlies of sour cream over their food instead of a giant glob in one spot. Plus, no extra bowl to clean up, just throw the baggie away when the sour cream is gone. I love baggies,I always try to put my left overs in baggies so I won't have so many dishes when it comes time to clean out the fridge. Doesn't work for everything but it definitely helps.

Lemon Chicken

Cook some chicken breasts however you like (Gorge Forman grill, bake, bbq, whatever) Dice them up , add lots of lemon juice, finely chopped green onions, salt and garlic powder to taste, mix and serve over white steamed rice. If you don't have a rice cooker... get one! You just throw in the rice and water and as the infomercials say.."set it and forget it"!

Creamy Potato Bake

K here it goes, my first blog entry. Again, I don't claim to be a chef, I get my recipes from family, friends or experimenting. There is really nothing super incredible, fancy, or gourmet about it....that's the point! It's meant to be good and easy! This one is REALLY good and I got it from my Tia Lora! Shopping List
1. 1 bag of frozen hashbrowns (the ones that look diced, not the shredded style)
2. 1 can of cheddar soup
3. 1 can of cream of mushroom soup
4. 1 can of cream of celery (Really any creamy soups will work, whatever suits your taste)
5. 1/4 stick of butter
6. 1 small sour cream (about 1 cup)

Put all these ingredients in a bowl, microwave for about 5 minutes to melt and loosen everything up, mix together. Spray baking dish with nonstick spray, plop it all in the baking dish and cook at 375 for about 1 hour or until golden brown. Take your kids to practice, fold some laundry or go the gym and when you come back.. deliciousness! My favorite part...the crispy crunchy edges! Serve with baked pork chops or chicken, your favorite veggie and enjoy!

Clean up level: Super EASY, one bowl, one spoon, one baking dish!
Tip: Cook your meat in a foil pouch...easy clean up and it helps keep the meat moist.

Getting Started

I've decided to start my own cooking blog, personally as a stress reliever, but also to give friends and family ideas for their busy schedule. I'm no chef by any means but I do enjoy cooking. I teach all day and when I come home I like a good home cooked meal without the fuss. I hate washing dishes so I try to use the least possible amount of utensils, pots and pans to try to make my life a little easier. For the average busy work day, I don't like complex recipes that take all day, difficult to follow, or involve lots of steps or ingredients I can't even find, save those for Sunday family dinners! Hope you'll find my recipes/tips tasty and useful. Enjoy!
